El banano morado ecuatoriano (Musa acuminata Red Dacca) en la elaboración de snacks saludables, estudio de aceptabilidad

La tendencia hacia una alimentación consciente ha impulsado la búsqueda de productos innovadores que combinen practicidad, sabor y densidad nutricional. Este estudio analiza la aceptación del mercado frente a snacks saludables elaborados a partir de banano morado ecuatoriano (Musa acuminata 'Red Dacca'), fruta autóctona caracterizada por su elevado perfil de antioxidantes y atractivo sensorial. Se aplicó una metodología mixta con diseño exploratorio-descriptivo, que incluyó encuestas a una muestra de consumidores en la ciudad de Cuenca y entrevistas semiestructuradas a expertos en gastronomía y marketing. Los resultados cuantitativos muestran una predisposición favorable, con un 68% de aceptación positiva y una marcada alineación de la muestra (57 %) con el perfil de consumo LOHAS (Lifestyles of Health and Sustainability). Los atributos sensoriales más valorados fueron la textura crujiente (4,6/5,0) y el color natural (4,5/5,0), validando la eficacia del procesamiento mediante tecnología de aire caliente a 180 °C. Por su parte, la validación cualitativa destacó el alto valor de diferenciación del producto como "superalimento local". En conclusión, el snack de banano morado representa una alternativa comercialmente viable que responde a las demandas de "etiqueta limpia" y sostenibilidad, con potencial para diversificar la oferta agroindustrial y fortalecer la economía regional ecuatoriana.
